Rainbow Jell-O Cake: When Baking Meets Bejeweled Magic!

Some people absolutely love everything sweet and can’t resist a bite even when their doctors bed them to stay away. Others simply couldn’t care less for cakes, pastries and all things sugar. Despite falling in the latter category, even I was instantly drawn to this beautiful, Jello-filled rainbow wonder. Some call it stained glass cake, others prefer ‘broken glass’ cake, but we prefer to let everyone else haggle over the name and worry about just how to gobble it all up!

Making this multihued delight will obviously make you incredibly popular with kids and while it takes a bit of work, it is well worth the effort.

Here are Things You Need:

Crust:
• 1 1/2 cups cracker crumbs
• 1/2 cups granulated sugar
• 1/4 cup melted butter

Filling:
• 1 1/2 cups whipping cream
• 1 cup pineapple juice
• 1/4 cup cold water
• 1/2 teaspoon vanilla extract
• 1 tablespoon gelatin
• 3-4 cups cubed jello

It is also advised you keep you nice cheesecake pan handy for baking the crust and also letting the cake settle overnight. You can start off with the easy task of making the jello cubes and then get to the baking of the crust and work your way with the filling. Give the cake at least 6 hours to cool down and set completely and you will have a sugary delight that will have the little ones flipping over with joy.
