A microbiologist is sounding the alarm about a wooden cutting board habit found in almost every kitchen

You washed your wooden cutting board the way you always do. Warm water, a bit of soap, a quick scrub. You laid it down to air-dry. By dinner the next night, it wasn’t sitting quite flat. A wobble under the knife. A dip in the middle. A few weeks later, a thin dark line along the grain that wasn’t there when you bought it.

You didn’t do anything wrong at the sink. You did something wrong after the sink. And it’s so common that scientists who study kitchen surfaces say it’s a top reason wooden boards go from safe to risky in months, not years.

It’s not the soap. It’s not the sponge. It’s not even the dishwasher. The real problem is quieter, and it’s in almost every home kitchen.

What the scientist is actually worried about

Dr. Alan Goddard is a microbiologist at Aston University in England who studies how germs live on kitchen surfaces. Last year, he ran a study where regular families swabbed their own cutting boards and mailed the samples to his lab.

Gut germs, the kind that usually come from unwashed hands or raw meat juice, showed up on 44 out of every 100 boards tested. Skin germs showed up on 52. And the dirtiest boards all had one thing in common: they weren’t being dried the right way after washing.

His plain-English takeaway: germs struggle on dry wood, but bounce back on wet wood. A board that stays even a little damp, especially damp on just one side, is a welcome mat for bacteria.

That’s the warning. Not that wood is bad, or that plastic is safer. But that one small everyday habit is quietly turning safe boards into unsafe ones.

The habit is quiet, and it’s everywhere

Watch what happens right after a wooden board gets washed. Almost everyone does the same thing. It goes onto the counter. Or a dish rack. Or across the top of the sink. It sits flat. One side face-up, one side pressed against something solid.

That one moment, done hundreds of times over the life of a board, is wrecking the wood. Once the wood starts to fall apart, the food safety problem shows up right behind it.

What wood really does after it gets wet

Wood soaks up water. Even after a tree gets chopped down, dried, and turned into a cutting board, it keeps doing that. It puffs up in humid air, shrinks in dry air, and reacts fast to water.

The USDA Forest Products Laboratory, the U.S. government lab studying wood since 1910, has measured this exactly. Across the grain, wood can grow or shrink by 2% to 12% depending on the tree and the cut. Small numbers, big problem the moment the two sides of a board stop matching.

If one side has more water than the other, the wet side puffs up while the dry side shrinks at the same time. The wood pulls itself in two directions at once, fighting itself from the inside.

First, the board cups. It bends into a shallow bowl shape, edges lifting off the counter, and starts to rock under the knife. Then, as the wet-dry cycle repeats day after day, the wood can’t take it anymore and splits along the grain. On boards made from glued-together strips (which most kitchen boards are), the crack usually opens at a seam. On solid boards, it opens as a thin hairline running with the grain.

That crack is where the germ problem really starts.

A 2025 study in LWT – Food Science and Technology, a peer-reviewed food safety journal, examined cutting boards from real home kitchens under a powerful microscope. Inside the tiny cracks, scientists found a slimy shield of bacteria (they call it biofilm), plus germs that had survived normal washing. The study specifically found listeria and E. coli, two of the top causes of food poisoning in the US.

Germs trapped inside cracks are different from surface germs you can wipe off. A sponge can’t reach them. A rinse won’t wash them out. Most kitchen cleaning sprays can’t touch them either. Every time you cut on the board, some get pushed back up to the top, where they can end up on your food.

So where does all that damage come from?

From one everyday moment, done over and over: laying the freshly washed board flat on a solid surface to dry.

When you lay a wet board flat, both sides are technically drying, but at very different speeds. The top side is open to the room. Air moves across it. Water leaves quickly. The bottom side is trapped against the counter. Air can’t get in. A thin film of water pools between the wood and the surface, and that side stays damp for hours after the top feels dry.

You’re not drying your board. You’re drying half of your board. That’s the uneven damp the USDA lab was talking about, happening on your counter hundreds of times a year.

The five-second fix that costs nothing

After you wash the board, wipe both sides once with a clean dish towel to get the surface water off. Then stand it up on its narrow edge, either propped against the backsplash or set into a slot on your dish rack. Both sides now get the same air, at the same time. No trapped damp underneath. No uneven puffing and shrinking. No inside-out tension. No hairline cracks starting.

The University of Maine Cooperative Extension gives the same advice in its home food safety guide: dry the board well, then store it so air can reach both sides. John Boos, the American butcher block company that’s been making wooden boards for professional kitchens since 1887, says the same thing in its official care guide: let it air-dry standing up so water doesn’t pool.

There’s a food safety kicker too. Dean Cliver, a food germ scientist at the University of California-Davis whose work is still cited by the USDA, found that plain wood, all on its own, kills most surface germs within minutes. But that natural germ-killing only works on whole, uncracked wood. Keep the board flat and crack-free, and it actually defends itself.

What to do next time you wash yours

  1. Wipe both sides with a towel first. Don’t skip this. A soaking wet board propped up just lets water run down the grain.
  2. Stand it up on its narrow edge. Against a wall, a backsplash, or in a vertical slot on your dish rack. Both sides need air.
  3. Give it room. Don’t lean it against another wet board or shove it into a closed cabinet while drying.
  4. Once a month, rub a little food-safe mineral oil into both sides. This slows how fast the wood swaps water with the room, so the wet-dry back-and-forth that wears the board out slows too.
  5. Never put it in the dishwasher. Ever. That’s a whole different way to kill a board, and it happens fast.

If your board is cupped but hasn’t cracked, you can often flatten it back out. Lightly dampen the dished-in side, stand it up for a day so the sides even out, then lay it flat under weight for another day. If it’s already cracked deep enough that food gets stuck in the gap, it’s done as a cutting board. Move it to serving duty.

Your board didn’t fail because you used it too much. It failed because of where you set it down after the last wash. Change that one thing, and the same board that used to warp in a season will stay flat for years.
