You pull the sheet pan out of a 425°F (218°C) oven, slide the roasted veggies onto a plate, and it’s a greasy mess. Six months later, you notice something weird. Oil rolls off to one side when you drizzle it. Cookies come out dark on the left and pale on the right. The pan wobbles when you set it on the counter. It’s basically turning into a Pringles chip.
So you blame the oven. You figure the heat finally beat it up, or maybe the pan was cheap to start with, or that’s just what happens to bakeware after a while. You buy a new one. The new one warps too. And the one after that.
The oven isn’t the problem. The oven was never the problem.

What’s actually going on with your pans
Sheet pans do warp for a few reasons, but almost everyone blames the wrong one. America’s Test Kitchen, which puts dozens of baking sheets through side-by-side tests, explains it simply: metal expands when it heats up and shrinks when it cools down. That’s normal. Most pans that bend a little while they’re in the oven pop right back to flat once they cool off. The ones that stay bent got pushed way past what the metal can take.
Nordic Ware, the family-owned Minneapolis company that’s been making sheet pans in the U.S. since 1946, spells it out on its own care page. Warping happens when one part of a pan gets hotter or colder way faster than the rest of it. That side pulls one way while the rest of the pan is still going the other way. Something has to give, and what gives is the flat bottom.
Consumer Reports, in its cookware testing, has flagged the same thing for years. Thin, lightweight pans are the first to bend, and the surest way to trigger a warp is a fast, one-sided temperature swing. Aluminum sheet pans, which is what almost every American kitchen has stashed in the cabinet under the stove, are especially easy to bend. Aluminum stretches and shrinks more than twice as much as stainless steel does for the same temperature swing. That’s why it browns cookies so nicely, and it’s also why one wrong move ruins it.
Now, if you’re picturing the oven as that “one wrong move,” stop. A preheated oven wraps the whole pan in even, all-around heat. The metal warms up slowly, all over, and stays that way for the whole bake. No fight. No damage. Aluminum sheet pans are actually built to handle oven temperatures up to 500°F (260°C), according to Nordic Ware’s product specs. The oven isn’t what breaks them.
So if it isn’t the oven, what is it? It’s something so ordinary that nobody thinks twice about it. It happens in the sixty seconds between when the pan leaves the oven and when it hits the sink. That’s the window where sheet pans die.
The moment the damage actually happens
A hot sheet pan straight from a 425°F (218°C) oven is loaded with heat. The metal is fully stretched out. It wants to shrink back to normal, and it will, on its own, as long as nothing rushes it.
Now think about what most people do next. Dinner’s on the table, the pan’s greasy, the sink’s right there. In goes the pan. On goes the cold tap. That hiss and cloud of steam? That’s the sound of your pan getting bent out of shape for good.
There’s a name for what just happened: thermal shock, which just means “the metal got cooled way too fast on one side.” Cold water hits only the part of the pan touching down first. That side shrinks in a split second. The rest of the pan, still hot, refuses to move. The two halves fight each other, and something has to bend. What bends is the flat bottom.
Cook’s Illustrated puts it in one sentence: “Avoid rinsing a hot baking sheet in cold water. Instead, let the sheet cool before washing so that the metal can contract gently and evenly.” Nordic Ware says the same. Nonstick pans get hit twice: the pan bends, and the coating can crack or peel, per Bob Vila. One rinse can chop years off a nonstick pan.
The fix costs nothing and takes zero effort
If you just read that and thought, yep, that’s me every night, you’re in good company. It’s the single most common way home cooks quietly kill their sheet pans. The fix is nothing. Really, nothing. You do less, not more.
Do this instead, every time:
- Pull the pan out of the oven and set it on a cool stovetop grate, a wire cooling rack, or a wooden trivet. Anywhere air can move around it.
- Walk away. Let it cool all the way down to room temperature on its own. That takes 20 to 30 minutes for a standard half sheet pan.
- Then wash it with warm (not cold) soapy water and a soft sponge. Hand wash only. Dishwasher soap is rough on aluminum and will discolor it, per Nordic Ware’s care page.
- Dry it fully before putting it away.
That’s the whole thing. Nothing to buy. Nothing to learn. You just stop dunking hot metal in cold water and let the pan cool off the way it wants to. Yes, it means the pan sits on the counter greasy for half an hour. That’s a much smaller problem than replacing your sheet pan every year.
One bonus tip while you’re at it: try to cover most of the pan surface with food when you bake. America’s Test Kitchen also points out that if bare pan is sitting under full oven heat while another section is covered by cold food, that uneven swing can cause a smaller warp mid-bake. If your food doesn’t cover the pan, use a smaller one.
If your pan is already warped
For a small warp, Nordic Ware says to wait until the pan is fully cool, lay it flat, and push down hard on the highest point of the bend with your hands. Some pans pop back. For a bad warp, America’s Test Kitchen suggests warming the pan at 200°F (93°C) for about ten minutes, then flipping it upside down on a folded towel and pressing the raised part down. Neither trick is a sure thing. A pan that’s been shocked over and over may just be done.
